How to make Aloo dum, the potato curry

It’s potato curry. There seemed to be various kinds of ways to cook Indian “curry”. This time I first tried to stir fry the potato with coriander, and boil them with lots of spices. This is a very popular way of cooking curry in India!

<Ingredients>
water
oil
a few potatoes
half cauliflower
4 tomato
2 onion
1 green onion
a bundle of coriander
salt
5 pieces of garlic
1 piece of ginger
a few chili
1~2tbs haldi power
1tsp garam masara (black pepper, cumin, cardamon, long pepper)

<Preparation>
1. cut the vegetable
2. grind garlic and chili

<Recipe>
1. heat the oil
2. add green onion and onion and stir fry them
3. add cauliflower and stir fry them
4. add potato and stir fry them
5. add salt and stir fry them
6. cover the pan as the vegetable get soft
7. keep the cover on except when stir fry it once in 3minutes
8. repeat 7. for about 15minutes
9. take 8. off to another plate
10. heat the oil in a pan
11. add grinded garlic, ginger, chili, and garam masala
12. add haldi power and stir fry
13. add coriander and stir fry
14. add tomato and stir fry
15. add water and stir
16. add 9., stir, put the cover on
17. keep the cover on except when stir fry it once in 3minutes
18. repeat 17. for about 15minutes

The sweetness of tomato taste very good in the spices. Cauliflower and potato mingle each other very well. It’s not spicy and recommended to those who are not used to spiciness.
